Another classic from my Savannah days! August 8, 2012. I made this from a recipe I found on Pinterest from Martha Stewart Weddings.
Cucumber Mint Gimlet
2 oz Cucumber Gin (see recipe below)
1 oz lime juice
1/2 oz Mint Simple Syrup (see below)
Shake ingredients with ice, pour into a glass over ice, garnish with cucumber peel & mint sprigs.
I would add some club soda to this. Without it it’s pretty strong, and it’s tasty but just a lot of strong flavors going on.
This was pretty tasty! But had a lot of strong flavors going on. I added club soda to this to taste to tone it down a bit. Yummy.
Steep 1/2 cup diced, peeled cucumber in 1 cup gin, covered and chilled, 8 hours to 4 days; strain.
Mint Simple Syrup
Heat 1 cup sugar and 1 cup water over medium-high heat, stirring until dissolved. Add 1 cup mint leaves, remove from heat; cover and steep 30 minutes to 1 hour. Strain & discard mint.
